Leo Carreira returns to Carousel nearly a decade after his first residency. From the pioneering cookery of Londrino to his trailblazing dry-ageing techniques at The Sea, The Sea, Leo’s artistry is unmistakable. Expect mini masterpieces like his rice crab sandwich with ginger lemongrass 'Philadelphia'; and aged beef, roasted koji cream, chilli oil, sweet bun.
