Creations like ‘caviar cured in kelp with chicken wing and sansho pepper’ and ‘BBQ lassen trout with dried scallop’ celebrate the bounty of the Bay Area in true bar-raising fashion.

Our week with @makanmx is well underway and their menu, with influences from Malaysia, Indonesia and Honk Kong, is all-killer, no-filler. You’re looking at their ‘larb beef tartare with smoked eggplant purée and purple mustard greens’; ‘Hainanese chicken rice with scallion oil and chiles toreados’; ‘smoked duck sausage taco, bistec and nam from’; and their ‘tu mama flan’ finished with grated Buddha’s hand. Michelin-starred @vistarestaurante sits at the cutting edge of Portuguese cuisine, and its Atlantic coastline. Just metres from the waves in Portimão (hence the name), a table here offers an unrestricted, fully immersive experience of the Algarve from super talent @joaooliveirachef. Reimagined through the lens of his star-studded fine dining background (Largo do Paço*, The Yeatman**, Vila Joya**), João celebrates his lifelong connection to the Atlantic in thoughtful dishes like ‘mussels, pink shrimp, halophyte herbs’; ‘scallops, charred pumpkin, passion fruit’; and ‘bacalhau à brás 1.1’.  Olivia’s love affair with the “never-ending” regional specialities of Italian cuisine began at a young age, when she first learnt to make pasta from her nonna (her mother’s family comes from Emilia Romagna, spiritual home of the things we dream of when we’re hungry). Inspired by her roots and her extensive travels around the peninsular – including a very happy time working with the Pasta Grannies in villages up and down the country, culinary residencies at Numeroventi (Florence) and Parco de Sesi (Pantellera), and a formative stretch at bustling Florentine osteria, Cibrèo – Olivia has fast become one of the UK’s most exciting flag bearers for traditional Italian food culture. Returning to Carousel, where her career as a chef began, Olivia has put together a menu of wall-to-wall seasonal crowd pleasers for us that celebrates the warmth and generosity of Italian home cooking as it once was.  Our Ibizan guest chefs this week, Matías and Miguel, are bringing their ever-evolving Mediterranean flavours straight from their island hotspot, @hambreibiza. With dishes like deep fried marinated skate, cuttlefish stew, kale & cashew Caesar, pickled mackerel brioche, and muscovado cake, it’s easy to see why Hämbre is an essential (and often impossible) booking in Ibiza. Matías Romano and Miguel Lopez are bringing certified bangers like deep-fried skate wing with tangy vinegar and paprika, and their pickled mackerel and Ibérico pork jowl brioche. P.S.  The team from Copenhagen has arrived, and they’re showing us that, despite the name, @poplburger is far from your typical burger joint. Expect creations like the ‘lion’s mane burger with forest pesto,’ ‘yellow beets with quince juice,’ and what can only be described as the flan to end all flans, finished with elderflower oil. @nomaprojects are in on the action too, with their corn yuzu hot sauce on every table and the ultimate umami Negroni at the bar. Jacob’s extraordinary talent (recommended to us by none other than Jeremy Chan) first drew acclaim at Erizo, a West Coast sensation named one of America’s Best New Restaurants for its 20-course seafood tasting menu. He then took his innovative approach to Brooklyn’s Place des Fêtes, the latest from the team behind Michelin-starred Oxalis. Now, he’s bringing his Pacific vision to life at Winnie’s. This soon-to-be-landmark restaurant may be named for his daughter, but it’s rooted in pure reverence for the ocean. Jacob’s commitment runs deep; he’s often found foraging gooseneck barnacles, diving for butter clams, and pulling fresh seaweed straight from the shore. Back in the kitchen, his creations like ‘caviar cured in kelp with chicken wing and sansho pepper’; ‘purple varnish clams, pork jowl and potato dashi’; and ‘BBQ lassen trout with dried scallop’ celebrate the bounty of the Bay Area in true bar-raising fashion.  Ceviche is thought to have originated in Peru, making its way through Mexico and picking up local touches along the way. At No. 23, we keep the tradition alive with a rotating ceviche tostada. Last week, it featured sea bass, but with a whole tuna just in, you can imagine what’s next… Topped with salsa macha, aioli, and pickled onions, it’s our tribute to the undeniably bold flavours of Latin America.

 BOH-zha-LAY noo-VOH. It’s almost time. On the third Thursday of November, we’re embracing the French tradition of Beaujolais Nouveau Day, celebrating the first pour of this year’s harvest. Light, fruity, and served chilled, this easy-drinking wine is all about instant gratification. No wonder the French coined it “glou-glou” for that deliciously glugable sound. Join our in-house sommelier and all-round connoisseur of good times, Joshua Bratt, for an unpretentious tasting of this ultra-quaffable drop. From his Baja-style seafood platter to Cornish tuna with salsa tatemada, oyster mayo, and seed salsa macha, José Figueroa brings Tijuana’s bold flavours to Carousel—with a seasonal British twist. His tamal de Westcombe cheddar with nixtamalised winter tomatoes might sound like two worlds apart, but he brings them together beautifully.
