Having spent the best part of a decade perfecting his craft in the kitchens of The Dorchester, Dinner and Elystan Street, Thomas was all set to open his first solo project in London this autumn until you-know-what happened. ACRE’s opening has been pushed back a few months, so Thomas is joining us in the kitchen instead, giving us a tantalising glimpse of what his new restaurant is all about: simplicity, seasonality and conviviality.
