Nargisse is a best-selling author and executive chef of L’Mida, Marrakech, where each dish is a joyful celebration of her Moroccan heritage.
The super chic hotspot with that lavish green rooftop, L’Mida draws an international crowd with its contemporary riffs on Moroccan classics. Pairing traditional ingredients with modern techniques and some unexpected partners, L’Mida is “brimming with the exotic flavours of Morocco, but not as you know them” (The Telegraph).
For her Carousel residency, Nargisse will be focussing on more old school Moroccan flavours, but with that fresh, deceptively simple approach that fans of her acclaimed book Casablanca and her New York Times recipes have come to expect. Dishes include ‘Zaalouk’ (burnt aubergine, tomato confit, coriander oil, batbout), ‘Lamb Mechoui’ (likama, clear gravy) and ‘Moroccan Mint Tea and Chocolate Velouté’.
