Proudly focusing on local Norwegian ingredients like Hjerttind reindeer, Lyngen shrimp and Vestfold duck, Smak (meaning ‘taste’), in the far-flung Arctic city of Tromsø, has quickly carved out a reputation as one of Norway’s very best restaurants. You might even call it an overnight success if the nights weren’t so damned long up there at this time of year...
Serving just a handful of guests at a time, game-changing head chef Espen Ramnestedt showcases local Arctic produce through a combination of classical cooking and modernist techniques, creating seasonal, Michelin-worthy dishes such as ‘Skrei Cod, Smoked Nordvoll Gård Carrot Purée and Sandefjord Smør’ and ‘Reindeer, Finnbiff Sauce and Lingonberry’ that are a wonderfully original celebration of authentically Nordic flavours.
We’ve worked closely with Espen and his fishermen friends to bring some of his go-to ingredients to London, creating a unique menu that combines local Arctic delicacies with some of the finest seasonal produce that our own country has to offer. All we’re missing are those Northern Lights...
