Nuno Mendes needs no introduction. The gastronomic pioneer behind The Loft Project (the original platform for up and coming chef talent from around the world), Viajante, Corner Room, Chiltern Firehouse, Taberna do Mercado, Mãos and, most recently, the Bairro Alto Hotel in his hometown of Lisbon, the Portuguese icon has dedicated his life to curating ever more immersive experiences for his guests. Nuno continues to explore the diversity and rich cultural tapestry of Portuguese cuisine throughout his many projects. His five nights at Carousel will showcase his lifelong passion for the flavours of Goa – he first fell in love with the region as a child when his father and grandmother took him to a Goan restaurant in Lisbon – with a jaw-dropping tasting menu featuring the likes of ‘Prawn Stuffed Poppadoms’, ‘Crab Samosas’, ‘Monkfish Tail with Xec Xec’, ‘Suckling Pig Vindalho’ and ‘Lamb Shoulder Xacuti’.
